Unlike tequila, which is restricted to blue Weber agave, mezcal embraces diverse species such as Espadín, Tobalá, and Madrecuixe, each giving unique flavours.

Production is typically artisanal: agave hearts (piñas) are roasted in underground earthen pits lined with volcanic rock, giving mezcal its signature smoky character. After roasting, the agave is crushed, fermented with natural yeasts, and distilled in small batches, often using copper or clay stills.

Styles include joven (young, unaged), reposado (rested briefly in oak), and añejo (longer-aged), though many producers focus on unaged mezcal to highlight the pure agave profile. Its flavour can range from earthy, smoky, and mineral to fruity, floral, or herbal, depending on the agave variety and region.
